Healthy chocolate protein cookies

Ingredients

  •  1 egg beaten (flax egg works fine too)
  • 1 tsp vanilla bean paste or essence 
  • 1/2 cup tahini - would work with nut or seed butter too
  • 1/4 sea salt
  • 1 cup of Tia Miers Whole Health Protein powder 
  • 1/2 cup of coconut sugar 
  • 1/2 tsp baking powder mixed with 1 tsp lemon juice (to activate)
  • 1/2 cup of chopped dark chocolate- make sure it’s the high vibe stuff with at least 70% cacao 
  • 1/4 cup of macadamia nuts or omit if you need it nut free 
  • Dash of water if needed to make the mixture more moist
  • Flaky sea salt to top if desired 

Method

  1. Mix everything together in a bowl (reserving some chopped chocolate for the tops and the flaky salt if using)l. Preheat oven to 180 degrees.
  2. Roll into 9 small balls and pressed into a lined tray. Add to top of cookies more reserved chocolate and flaky salt if using. 
  3. Place in the oven for 12-15 minutes depending on how hot your oven is- watch them carefully from around 10 mins so they don’t burn.
